Huevos rancheros recipe to celebrate Hispanic Heritage Month

October 14, 2020 by Ana Valenzuela Leave a Comment

Hispanic Heritage is a month to celebrate family traditions, customs, fiestas and much more. It also means enjoying delicious food! Being Mexican-American, I love spiciness in my food even at breakfast time - yes that's right breakfast! My mother would cook huevos rancheros for my father after a hangover, or when she was feeling like he needed some spiciness to wake him up. I would never pay attention to how she would make them, since I did not like them when I was younger, but now they are the best for me. I can have them every morning. Not to mention, they are my husband's favorite as well. It is a very simple breakfast to make - preparation time is around 10-20 minutes - and I … [Read more...] about Huevos rancheros recipe to celebrate Hispanic Heritage Month

Cooking Thanksgiving Dinner with Andrew Jackson

November 16, 2015 by Archived posts Leave a Comment

By Sandy Rodriguez | Staff Writer | Let's face it, we can't all make it home for Thanksgiving and we can't all afford to cook an expensive dinner. Some of us have homework and others have work, but that doesn't mean we can't have a home-cooked holiday dinner away from home or that we have to spend $30 on a turkey alone. I made it my mission to prepare a savory Thanksgiving dinner without spending Thanksgiving money. I made my way to Stater Brothers with only $20 in my pocket and went straight to the meat aisle. I found a ready-to-heat, honey cured boneless ham for about $11. I bought a can of pineapple for $1.50, so I could add it to the top of the ham, but that is … [Read more...] about Cooking Thanksgiving Dinner with Andrew Jackson

French Cuisine a la Awesome

May 17, 2015 by Archived posts Leave a Comment

By Pauline Fontanaud |Staff Writer| A lot of people think French cuisine is sophisticated and too complicated to prepare. As a student, the last thing I want is to spend hours cooking something that I’m going to eat in 15 minutes. My mother taught me some recipes native to my home country, France, that anyone could do. Ratatouille and Tarte Tatin are recipes that are both perfect for lunch or dinner, all year-round. Ratatouille is a typical Provençal dish. It’s a quick and simple vegetable casserole to make, and delicious to eat. Preparation Time: 15 to 20 minutes Cooking Time: 60 minutes Yields 4 to 6 servings. Ingredients 1/3 cup extra virgin olive oil, plus more as … [Read more...] about French Cuisine a la Awesome
